Super Easy Spaghetti Lattice Pie!

I hope you've had a great week :)  Do you remember the recipe for Scottish Caramel Shortbread I posted recently? A childhood favourite from my school days it seemed to be quite popular so I thought I'd share another little glimpse into a 1970s Scottish Primary School "dinner school."

This is such an incredibly easy dish to make and you can be certain that kids, from 1 to 100 will adore it :) You'll also probably have the ingredients in your kitchen already, and kids will love being able to help with the lattice topping too :)
Basically the ingredients for Spaghetti Lattice Pie are shortcrust pastry and canned spaghetti. That's it honeys I swear :) Maybe Scots kids were easily pleased in the 70s, but hey, we all had Raleigh bikes and summers that felt like they never ended so... you know :) You can either make your shortcrust pastry from scratch or use a pack of ready made depending on how busy the day is.

So, having assembled your ingredients, pre-heat your oven to 160C  I've used ready made pastry because I had a pack in the fridge and have used a can of spaghetti bolognaise because hubby loves it :) The original spaghetti pie though, much loved by 1970s schoolchildren was plain spaghetti in a tomato sauce.

Firstly, roll out around three quarters of your pastry on a lightly floured surface and line a casserole or lasange dish.  Set the remaining pastry aside for now.

Once your dish is lined with the pastry, cover your pastry with greaseproof paper or baking parchment. I then added my ceramic baking beans but if you don't have them, use some rice honeys. It's important to partially bake your pastry case before adding your spaghetti, this is called "baking blind."

Place your pastry case into the oven for 12-14 minutes until a very pale golden, remove (carefully) and set to one side until it's cool enough for you to remove the baking beans or rice safely.  If you've used rice (which I did for a long time until I saw the ceramic beans) you can pop them into a container to re-use next time you make pastry.

Open your can of spaghetti and add to your pastry case. Depending on what size of dish you've used you might need to use two cans.

Now we fetch the remaining pastry, and this is the fun part :) Roll it out and cut several long strips, long enough to place lengthwise across your pie, then we need a few to lay across in the opposite direction to create a lattice effect.

Place your spaghetti pie carefully back into the oven until your lattice effect pastry has turned a lovely golden brown.  Cut into slices and serve with thick cut homemade rustic chips (fries) Essentially whole potatoes cut into chunky chips and deep fried in their skins. Don't have them often anymore (we oven cook everything these days) but as a treat and served with this Spaghetti pie... well we might as well be back in the 1970s :) wow!
